1. Meringue: Mix 3/4 cup granulated sugar with 1/2 cup boiling water. Stir until completely dissolved. Cool. Add 1/4 cup meringue powder and beat with wire whip until it peaks. Spread on pie or press through a pastry bag and bake.
2. Royal Icing: Mix 1/4 cup meringue powder with 1/2 cup water. Beat until it peaks. Add 4 cups sifted powdered sugar (1/2 cup more for a stiffer icing), beat to desired consistency.
3. Butter Cream Icing: Mix 3/4 cup granulated sugar with 1/2 cup boiling water.Stir until dissolved. Cool. Add 1/3 cup meringue powder and beat until mixture peaks. Stir in 1 LB sifted powdered sugar. Mix until completely blended. Add 2 cups softened butter, margarine or white vegetable shortening, more for a
softer, smoother consistency, and mix until you reach desired consistency.
